Real ale is beer brewed from the traditional ingredients of malted barley, hops, water and yeast. It is matured by secondary fermentation in the cask from which it is dispensed, which is due to yeast from the brewing process being left inside the beer to produce natural carbonation and evolve the flavours of the beer.

There are a range of other terms for real ale, such as ‘cask-conditioned beer', ‘real cask ale', ‘real beer' and ‘naturally conditioned beer.' They are all an umbrella term for traditionally produced beer, which is served from a cask and contains live yeast.

The term ‘real ale' and the above definition were coined by CAMRA (The Campaign For Real Ale) in the early 1970s.
